Extra virgin olive oil is a natural product, as if it were, freshly squeezed olive juice. The smell and taste may vary from year to year, depending on weather conditions.
The Proverbio organic extra virgin olive oil is obtained by the Nocellara del Belice cultivar coming from organic farming. Absolutely no chemical products are used, neither during the different phases of the soil treatment nor in the treatment for the prevention of diseases.
The olive harvest is done by hand. Subsequently, the olives are cold-pressed to give the maximum degree of smell, taste and appearance. The oil is naturally decanted and bottled without treatment.
The obtained organic olive oil has an optimal organoleptic quality thanks to the low acidity, the richness of taste, the intense green color and the ideal conservation of the high quality characteristics.
A possible sediment suggests the authenticity and naturalness of the product, which does not undergo any filtration during processing and therefore retains all the organoleptic qualities.
Extra virgin
An "extra virgin" oil can only be obtained through mechanical or physical procedures with cold extraction (with a temperature ranging from 18°C to 27°C). This facilitates the extraction of the juice without changing the characteristics. Apart from washing, decanting, centrifugating and filtering, the olives are not subject to any treatment.
The "Proverbio" extra virgin olive oil is produced exactly according to this method and can therefore be considered an absolutely pure fruit juice with all its health benefits.
Our oil is prepared from the olives "Nocellara del Belice" - grown organically on the hills of Castelvetrano between the height of 50 and 350 meters above sea level. The harvest is typically done by hand, the olive oil is cold pressed without any chemical treatment. It is a method of mechanical pressing for the extraction of vegetable oils.
The oil is naturally decanted and bottled without treatment. The obtained organic extra virgin olive oil has an optimal organoleptic quality thanks to the low acidity, the richness of taste, the intense green color and the optimal conservation of the qualitative characteristics.
